Instructions

  1. Prepare Chocolate: Place the finely chopped white chocolate in a medium mixing bowl and set aside.
  2. Heat Cream and Champagne: In a medium saucepan, combine heavy whipping cream and champagne over low-medium heat, stirring occasionally until smooth. Bring to a simmer and remove from heat immediately.
  3. Make Ganache: Pour the hot cream and champagne mixture over the chopped white chocolate and stir immediately until smooth and silky.
  4. Add Butter and Chill: Stir in the softened unsalted butter until fully combined. Transfer ganache to a container and chill in the refrigerator for 45-60 minutes, but no longer than 1 hour.
  5. Melt Coating Chocolate: Towards the end of chilling, melt the white chocolate wafers in a double boiler setup over simmering water. Stir occasionally until almost smooth, then add Crisco shortening and continue stirring until silky smooth. Set aside.
  6. Form Truffle Centers: Using a 1-inch cookie scoop, portion the chilled ganache and roll each scoop into a smooth, round ball using your palms. Place each ball on a parchment-lined baking sheet. Repeat until all ganache is used.
  7. Dip in White Chocolate: Dip each truffle ball into the melted white chocolate using dipping tools or two forks to evenly coat. Place coated truffles on parchment paper and immediately top with decorative sprinkles. Repeat for all truffles.
  8. Final Chill: Return the coated truffles to the refrigerator and chill for an additional 30 minutes before serving.
