Instructions

  1. Prepare the Cookie Dough: In a large mixing bowl, cream together 3/4 cup vegan butter and 3/4 cup granulated sugar until light and fluffy. Mix in 2 tablespoons almond milk, 1 tablespoon cornstarch, and 1 teaspoon vanilla extract until well combined.
  2. Combine Dry Ingredients: In another bowl, whisk together 2 cups all-purpose flour, 1/2 teaspoon baking powder, 1/4 teaspoon baking soda, and 1/2 teaspoon salt.
  3. Mix Dough: Gradually add the dry ingredients to the wet ingredients, stirring until a smooth dough forms. Avoid overmixing to keep the dough tender.
  4. Bake the Bars: Preheat the oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper or lightly grease it. Spread the dough evenly into the pan. Bake for 15 minutes until edges are slightly golden and the center is set. Remove and let cool completely.
  5. Prepare the Buttercream Frosting: In a mixing bowl, beat 6 tablespoons vegan butter until creamy. Gradually add 2 cups powdered sugar and continue beating.
