  • 1 tablespoon fish sauce

  • 1 bunch holy or Thai basil leaves


Instructions

  1. Prepare the aromatics: In a wok over high heat, add the oil, sliced chilies, shallots, and garlic. Stir-fry for 1 to 2 minutes until fragrant and slightly softened.
  2. Cook the chicken: Add the ground chicken to the wok and stir-fry for 2 minutes, breaking it up into small pieces to ensure even cooking.
  3. Add seasoning: Sprinkle in the sugar, soy sauce, and fish sauce. Stir-fry everything together for another minute to combine the flavors.
  4. Deglaze the pan: Pour in the chicken broth to deglaze, allowing the liquid to cook off quickly over the high heat, infusing the dish with moisture and flavor.
  5. Add the basil: Toss in the fresh basil leaves and stir-fry until the basil is wilted and fragrant, about 30 seconds to 1 minute.
  6. Serve: Remove from heat and serve immediately over steamed rice for an authentic Thai meal.
