Ingredients
Scale
Steak and Seasonings
- 4 pounds sirloin steak or chuck roast, cut into bite-sized cubes
- 1 ½ teaspoons kosher salt, or to taste
- 1 teaspoon black pepper
- 1 ½ teaspoons garlic powder
- 1 teaspoon paprika (not hot)
Sauce and Extras
- 3 tablespoons olive oil, divided
- 1 large sweet onion, thinly sliced
- 1 cup low sodium beef broth
- 1-ounce packet au jus gravy mix
- 6 cloves garlic, pressed
- 5 tablespoons unsalted butter, sliced
- Chopped fresh parsley, for garnish
Instructions
- Prepare the Steak: In a large bowl, combine the cubed sirloin or chuck roast with kosher salt, black pepper, garlic powder, and paprika. Toss to coat the meat evenly with the seasonings.
- Sear the Steak Bites: Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Quickly sear the steak bites in batches until browned on all sides, about 2-3 minutes per batch. Transfer seared steak to the slow cooker.
- Sauté the Onions and Garlic: In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the thinly sliced sweet onion until soft and translucent, about 5 minutes. Add pressed garlic cloves and cook for another minute until fragrant.
- Prepare Slow Cooker Mixture: Add the sautéed onions and garlic to the slow cooker along with the beef broth and au jus gravy mix. Stir gently to combine all ingredients.
- Add Butter and Cook: Place sliced unsalted butter on top of the steak mixture in the slow cooker. Cover and cook on low for 7 hours or until the steak is very tender and infused with the garlic butter sauce.
- Garnish and Serve: Once cooked, stir gently and garnish with chopped fresh parsley. Serve hot over your choice of mashed potatoes, noodles, or rice for a satisfying meal.
Notes
- For best results, use either sirloin steak or chuck roast for tender, flavorful bites.
- Searing the steak before slow cooking locks in flavor and improves texture.
- Adjust seasoning to taste before serving if needed.
- This dish pairs beautifully with mashed potatoes, buttered noodles, or white rice.
- Leftovers keep well and can be reheated gently on the stovetop or microwave.
