Description

Delicious and healthy protein-packed chocolate covered cookie dough bites made with creamy cottage cheese, almond flour, and vanilla protein powder, dipped in rich dark chocolate. Perfect guilt-free snack for satisfying sweet cravings while fueling your body.

Ingredients

Scale

Dough Ingredients

  • 1 cup cottage cheese
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 3/4 cup almond flour
  • 1 1/2 scoops vanilla protein powder
  • 2 tbsp mini dark chocolate chips

Coating Ingredients

  • 1 cup dark chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Blend Dough: In a food processor or blender, combine the cottage cheese, maple syrup, and vanilla extract. Blend until smooth and creamy.
  2. Mix Dry Ingredients: Add the blended cottage cheese mixture to a medium bowl. Add almond flour and vanilla protein powder. Mix thoroughly until a thick cookie dough consistency forms.
  3. Fold in Chocolate Chips: Gently fold in the mini dark chocolate chips until they are evenly distributed throughout the dough.
  4. Portion and Freeze Dough: Portion out dough into mini muffin pan lined with paper liners. Place in the freezer and allow to firm up for 1 hour.
  5. Melt Chocolate Coating: In a microwave-safe bowl, melt dark chocolate chips with coconut oil, microwaving in 30-second intervals and stirring between until smooth.
  6. Coat Cookie Dough Bites: Using a fork, dip each chilled cookie dough bite into the melted chocolate until fully coated. Place on a lined baking sheet. Optionally, sprinkle with flaky sea salt.
  7. Set Chocolate: Transfer coated bites back to the freezer for 20 minutes to allow the chocolate to harden.
  8. Enjoy: Once set, enjoy these healthy protein chocolate covered cookie dough bites as a satisfying treat.

Notes

  • For a nut-free version, substitute almond flour with oat flour or sunflower seed flour.
  • Use maple syrup or honey as a natural sweetener to keep the bites wholesome.
  • Ensure the cookie dough is well chilled before dipping for easier coating.
  • Store leftovers in the freezer to keep the bites firm and fresh.
  • Add a pinch of flaky sea salt on top after dipping for a delicious sweet-salty flavor contrast.
