  3. Assemble the dish: Arrange the pear slices on a serving platter. Crumble the Gorgonzola cheese evenly over the pear slices.
  4. Prepare the honey drizzle: Warm the runny honey slightly in a small saucepan or microwave until just fluid and easy to drizzle. Stir in the finely chopped rosemary, thyme leaves, crushed chili flakes, pink peppercorns, and sea salt flakes to infuse the honey with herbs and spices.
