Ingredients
Scale
Vegetables
- 1.5 pounds baby potatoes (halved)
- 2 large onions (peeled and cut into wedges)
- 2 red bell peppers (seeded and chopped)
- 6 cloves garlic (minced)
Seasonings and Oil
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
Protein and Liquids
- 12 sweet Italian sausage links (pricked with a fork)
- 3/4 cup dry white wine
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for roasting.
- Season Vegetables: Transfer the baby potatoes, onion wedges, red bell peppers, garlic, olive oil, dried thyme, basil, rosemary, salt, and pepper to a large ziplock bag. Seal the bag and shake well to evenly coat the vegetables with the oil and spices.
- Arrange Vegetables: Empty the seasoned vegetables onto a large roasting dish or a rimmed baking sheet. Spread them out evenly across the bottom to ensure even roasting and crispiness.
- Coat Sausages: Place the sweet Italian sausages inside the same ziplock bag used for the vegetables and gently shake to coat them with any leftover olive oil and herbs, enhancing their flavor.
- Roast Initial Phase: Place the coated sausages directly on top of the spread vegetables in the roasting pan. Transfer the pan to the oven and roast for 30 minutes or until the vegetables are golden and crispy on the edges.
- Toss and Add Wine: Carefully remove the pan from the oven and toss the vegetables and sausages in the cooking juices to coat evenly. Pour the dry white wine into the pan and return it to the oven.
- Finish Roasting: Bake for an additional 20 minutes, or until the sausages are fully cooked through and the potatoes are tender when pierced with a fork.
- Serve: Serve the roasted sausage and potatoes hot. Optional accompaniments include mustard, fresh bread, or applesauce for added flavor and variety. Enjoy your hearty meal!
Notes
- This is a simple, one-pan meal perfect for busy weeknights and also stores well as leftovers for meal prep.
- You can substitute sweet Italian sausage with spicy Italian sausage for a more robust flavor.
- If dry white wine is not available, chicken broth can be used as an alternative.
- For extra crispiness, spread the vegetables in a single layer and avoid overcrowding the pan.
- Make sure to prick the sausages with a fork to prevent them from bursting during roasting.
