Description

Mediterranean Quesadillas combine fresh diced tomatoes, red onion, chopped spinach, feta, and mozzarella cheeses folded inside warm burrito-style tortillas. Quick and easy to prepare, these quesadillas make a nutritious and flavorful lunch or dinner with a crispy golden exterior and melty cheesy filling. Perfect for a wholesome Mediterranean-inspired meal in just 15 minutes.

Ingredients

Scale

Filling

  • 1 diced tomato (grape or cherry tomatoes recommended for sweetness)
  • 1/3 cup diced red onion
  • 1 cup chopped spinach
  • 1/2 cup feta cheese
  • 1 cup shredded mozzarella cheese

Other

  • 3 burrito style tortillas
  • 1 tablespoon cooking oil (for the pan)

Instructions

  1. Prepare the filling: In a bowl, combine the diced tomato, diced red onion, chopped spinach, feta cheese, and shredded mozzarella cheese. Mix gently to evenly distribute the ingredients.
  2. Assemble the quesadillas: Lay out each burrito-style tortilla and spread about one-third of the filling mixture on one half of each tortilla. Fold the tortilla over to create a half-moon shape, enclosing the filling.
  3. Cook the quesadillas: Heat a small amount of oil in a large flat pan or on a griddle over medium heat. Once hot, place one quesadilla in the pan and cook for 3 to 4 minutes on one side, pressing down lightly with a spatula. Carefully flip and cook the other side for another 3 to 4 minutes until the tortilla is lightly browned and the cheese inside is melted.
  4. Slice and serve: Remove the quesadilla from the pan and slice into 4 wedges. Repeat with the remaining quesadillas. Serve warm with your choice of toppings such as sour cream, salsa, or pico de gallo.

Notes

  • Use grape or cherry tomatoes for a sweeter and less watery filling.
  • Press down gently while cooking to help the quesadilla become crispy and ensure the cheese melts evenly.
  • For a vegetarian meal, ensure tortillas are free of animal fats.
  • Customize with your favorite toppings like guacamole, hot sauce, or fresh herbs for extra flavor.
  • If preferred, substitute burrito-style tortillas with whole wheat for added fiber.
