Instructions

  1. Cut the chicken: Slice the chicken breasts in half horizontally to create thinner cutlets for even cooking.
  2. Mix the seasoning: In a small mixing bowl, stir together the arrowroot powder (or flour), lemon pepper seasoning, and kosher salt.
  3. Season the chicken: Sprinkle the seasoning evenly over both sides of the chicken pieces, pressing it in with your hands to adhere.
  4. Cook the chicken: Heat extra virgin olive oil in a large pan over medium-high heat. Add the chicken and sear for 3 to 4 minutes on one side until golden and browned, then flip and cook another 3 to 4 minutes until an instant-read thermometer registers 160 to 165°F. Remove the chicken to a plate.
  5. Make the sauce: Add unsalted butter to the same pan. Sauté the minced garlic in the butter for about 30 seconds until fragrant. Pour in the chicken broth and lemon juice, stirring and reducing the sauce for 1 to 2 minutes to thicken slightly.
