Description

Jalapeno Peach Chicken is a vibrant and flavorful dish combining juicy chicken breasts with a zesty and sweet sauce made from fresh jalapenos, ripe peaches, honey, and apple cider vinegar. This recipe features a perfect balance of spicy, tangy, and fruity notes, creating a delightful fusion that’s both easy to prepare and impressive for any meal.

Ingredients

Scale

Chicken

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Sauce

  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the chicken later.
  2. Season Chicken: Season the chicken breasts evenly on both sides with salt and black pepper to enhance their flavor.
  3. Sear Chicken: Heat the olive oil in a large oven-safe skillet over medium-high heat, then add the chicken breasts and sear for 3-4 minutes per side until golden brown on the outside.
  4. Set Chicken Aside: Remove the seared chicken from the skillet and set it aside temporarily to prepare the sauce.
  5. Cook Jalapenos and Peaches: Using the same skillet, add the diced jalapenos and peaches and cook for 2-3 minutes until they soften slightly, releasing their flavors.
  6. Prepare Sauce Mixture: In a small bowl, whisk together honey, apple cider vinegar, water, and cornstarch until smooth to create a sweet and tangy sauce.
  7. Combine Sauce with Jalapenos and Peaches: Pour the honey mixture over the softened jalapenos and peaches in the skillet, stirring well and bringing it to a simmer to thicken slightly.
  8. Return Chicken to Skillet: Place the chicken breasts back into the skillet, spooning some sauce over the top to coat them.
  9. Bake Chicken: Transfer the skillet to the preheated oven and bake for 25 minutes until the chicken is cooked through and tender.
  10. Rest and Serve: Remove the skillet from the oven and let the chicken rest for a few minutes before serving. Serve hot with the sauce spooned over the chicken. Enjoy!

Notes

  • For extra heat, leave some jalapeno seeds in or add more diced jalapenos.
  • If fresh peaches aren’t available, frozen peaches can be used after thawing.
  • To make this dish gluten-free, ensure the cornstarch is certified gluten-free.
  • Use a meat thermometer to check that chicken reaches an internal temperature of 165°F for safety.
  • Serve with rice, quinoa, or a fresh green salad to balance the flavors.
