Antipasto Skewers are a delightful and colorful Italian-inspired appetizer featuring a combination of olives, Genoa salami, mozzarella, basil, grape tomatoes, and cheese tortellini. - 8 large green olives
- 8 Genoa salami slices - halved
- 8 mini Mozzarella cheese balls
- 8 large basil leaves
- 8 grape tomatoes
- 8 cheese tortellini - cooked and cooled
- 8 large black olives
Vinaigrette
- 1/4 cup good vinegar (Champagne, sherry, or balsamic)
- 2/3 teaspoon salt
- 1/2 teaspoon Dijon mustard
- 1/2 clove garlic - finely minced or 2 teaspoons minced shallots
- 2 teaspoons honey
- 3/4 cup extra-virgin olive oil
- 1/4 teaspoon fresh ground pepper
- 1/2 teaspoon fresh chives - chopped
- 1/2 teaspoon fresh basil - chopped
- 1/2 teaspoon fresh parsley - chopped
Instructions
- Prepare the vinaigrette: In a small bowl, whisk together the vinegar, salt, Dijon mustard, minced garlic or shallots, and honey until combined. Slowly drizzle in the extra-virgin olive oil while continuously whisking to emulsify the dressing. Season with fresh ground pepper, then stir in the chopped fresh chives, basil, and parsley to finish the vinaigrette.
- Assemble the skewers: Thread one green olive, half a slice of Genoa salami, one mini mozzarella ball, a basil leaf, a grape tomato, a cooked and cooled cheese tortellini, and one black olive onto each skewer, in that order. Repeat to make 8 skewers in total.
- Toss the skewers in vinaigrette: Lightly coat each assembled skewer with the prepared vinaigrette by gently brushing or drizzling it over them to add flavor and moisture.
- Chill and serve: Place the skewers in the refrigerator for at least 10 minutes to allow the flavors to meld and serve chilled or at room temperature as an appetizer or finger food for parties or light meals.
Notes
- These skewers can be prepared a few hours in advance and refrigerated to deepen the flavors.
- Use good quality extra-virgin olive oil and vinegar for the best taste.
- If you don't have fresh herbs, dried herbs can be substituted but use less to avoid overpowering the vinaigrette.
- For a vegetarian version, omit the salami or replace it with marinated artichoke hearts or roasted peppers.
