Instructions

  1. Heat oil and sauté aromatics: Heat the olive oil in a large dutch oven over medium-high heat. Add the diced onion and celery, cooking for 2-3 minutes until soft and translucent. Then add the minced garlic and cook for another 1-2 minutes until fragrant.
  2. Brown the ground beef: Add the ground beef to the pot and cook, stirring occasionally, until browned and no pink remains.
  3. Add vegetables and seasonings: Stir in the potatoes, carrots, green beans, tomato paste, diced tomatoes with juices, black eyed peas, corn, Italian seasoning, smoked paprika, chili powder, salt, pepper, and red pepper flakes. Pour in 4 cups of beef broth and stir to combine.
  4. Adjust broth and bring to boil: Add up to 2 more cups of beef broth to reach your desired soup consistency. Turn the heat to high and bring the soup to a boil.
