  • 3 peppers (assorted colours, 330g seeds and stalks removed)
  • 1 small onion (60g, finely chopped)
  • 2 garlic cloves (minced)
  • 1 cup cauliflower rice (120g, frozen)
  • 1 cup mushrooms (chopped, 80g)
  • 2 tbsp fresh parsley (finely chopped)

  • 14 oz ground turkey (400g, 7% fat)
  • 1 1/4 cup grated cheddar (120g)

  • 3 tbsp tomato puree
  • 1 tbsp dried Italian herbs

Instructions

  1. Prepare the peppers: Preheat the oven to 375°F (190°C). Cut the tops off the peppers and remove seeds and membranes. Set aside.
  2. Sauté vegetables: Heat olive oil in a skillet over medium heat. Add finely chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic, chopped mushrooms, and cook for another 3 minutes until softened.
  3. Cook ground turkey: Add the ground turkey to the skillet with the vegetables. Cook, stirring occasionally, until the turkey is browned and cooked through, about 5-7 minutes.
  4. Add cauliflower rice and season: Stir in the cauliflower rice, tomato puree, dried Italian herbs, salt, and pepper. Cook for another 3-4 minutes until everything is well combined and heated through.
  5. Stuff the peppers: Spoon the turkey mixture into each pepper until filled. Place the stuffed peppers in a baking dish.
  6. Add cheese and bake: Sprinkle grated cheddar cheese evenly over the tops of the stuffed peppers. Bake in the preheated oven for 20 minutes, or until the peppers are tender and the cheese is melted and golden.
  7. Garnish and serve: Remove the stuffed peppers from the oven, sprinkle with fresh parsley, and serve warm.
