Instructions

  1. Preheat Grill: Heat the grill to medium-high heat and place a grill pan on the grill. Allow it to heat for approximately 5 minutes until hot.
  2. Prepare Vegetables: While the grill is heating, core and slice the red and green bell peppers. Peel and slice the Vidalia or yellow onions. Place all the vegetables in a large bowl, drizzle with olive oil, and season with salt and pepper. Toss well to coat.
  3. Grill Sausages: Place the sausages on the hot grill pan. Cook each sausage for 3 minutes per side until they develop a slight char and are cooked through. Remove the sausages from the pan and tent them with foil to keep warm.
  4. Grill Vegetables: Add the prepared peppers and onions to the grill pan. Cook for 7 minutes, tossing occasionally as the edges char and soften. Remove from the grill once tender and nicely caramelized.
  5. Serve: Serve the grilled sausages hot with the peppers and onions on the side. Optionally, add red pepper flakes for extra heat and enjoy them with your favorite side dish or toasted rolls.
