Description

Delight in this simple and refreshing dessert featuring juicy grilled peaches topped with creamy vanilla ice cream, drizzled with caramel sauce, and garnished with roasted pistachios and fresh mint. Perfect for summer gatherings and quick to prepare, this recipe combines the natural sweetness of peaches with smoky grill marks for an irresistible treat.

Ingredients

Scale

Fruits

  • 2 large, ripe peaches

Other Ingredients

  • 2 tablespoons extra virgin olive oil
  • 4 scoops vanilla ice cream
  • Caramel sauce, for drizzling
  • Fresh mint, roughly minced
  • Roasted pistachios, roughly chopped
  • Finishing salt, to taste

Instructions

  1. Prepare Peaches: Halve and pit the peaches by cutting along the seam from stem to end, twisting the halves apart, and removing the pit with a knife and spoon if needed.
  2. Preheat Grill: Heat a grill or grill pan over medium-high heat, then brush the cut side of each peach half lightly with olive oil.
  3. Grill Peaches: Place peach halves cut side down on the grill and cook for 4 to 5 minutes until grill marks form and the peaches soften. Flip and grill for an additional 3 to 4 minutes, then remove from heat.
  4. Serve: Allow peaches to cool slightly but remain warm. Plate and top each half with a scoop of vanilla ice cream, drizzle with caramel sauce, and sprinkle with chopped pistachios, fresh mint, and finishing salt. Serve immediately.

Notes

  • Use freestone peaches for easier pitting, but clingstone peaches also work well.
  • Adjust amount of caramel sauce and finishing salt to taste for balance between sweet and savory.
  • Perfect dessert for summer BBQs or outdoor gatherings, ready in under 30 minutes.
  • Peaches can be grilled on an outdoor grill or a stovetop grill pan if an outdoor grill is unavailable.
