Batter

Instructions

  2. Form Cheesecake Balls: Scoop out 1 tablespoon of the cheesecake mixture at a time and shape into mounds (perfect roundness is not required). Place each mound on a parchment paper-lined baking sheet. Freeze for at least 30 minutes to firm up.
  3. Prepare the Frying Oil: Pour the canola oil into a heavy-bottom pot, making sure it is at least 2 inches deep. Heat the oil over medium heat until it reaches 365 °F (185 °C). Meanwhile, line a baking sheet with paper towels for draining the fried bites.
  4. Make the Batter: In a medium bowl, whisk together the flour, sugar, and baking powder. Add the milk and whisk until smooth and free of lumps.
  5. Coat the Cheesecake Bites: Remove the frozen cheesecake balls from the freezer. If desired, gently shape them to round more, handling carefully to preserve firmness. Using a slotted spoon, dip a few balls at a time into the batter, turning them to coat evenly.
