Instructions
- Cook Chicken: Season the chicken breasts evenly with salt and freshly ground pepper on both sides. Heat the olive oil in a Dutch oven or braiser over medium-high heat. Add the chicken breasts and cook for about 4 minutes per side until browned and cooked through. Remove the chicken from the skillet and cut into 1-inch pieces. Set aside.
- Make Sauce: Reduce heat to medium and add the butter to the same pot. Melt the butter then add the minced garlic, sun-dried tomatoes, and Italian seasoning. Sauté until fragrant and aromatic, about 1 to 2 minutes.

- Finish Dish: Return the cut chicken pieces to the pot along with the baby spinach. Cook for another 1 to 2 minutes until the chicken is warmed through and the spinach has wilted.
