Description
One Pot Creamy Cajun Sausage Pasta is a flavorful and easy-to-make dinner featuring spicy andouille sausage, sautéed vegetables, and a creamy Cajun sauce, all cooked together in one skillet for a comforting and satisfying meal.
Ingredients
Scale
Sausage
- 13 oz. andouille sausage links (about 4 links), sliced into medallions
Vegetables
- 6 oz. fresh baby bella mushrooms, cleaned and thinly sliced
- 1/2 medium red bell pepper, stemmed, seeds removed, thinly sliced
- 1/2 medium yellow bell pepper, stemmed, seeds removed, thinly sliced
- 3 large garlic cloves, minced
- 1/2 cup canned, diced fire-roasted tomatoes
Pasta and Seasonings
- 12 oz. gluten-free penne pasta
- 3 1/2 cups chicken broth
- 2 tablespoons no-salt or low-salt Cajun seasoning mix
- 7 oz. cream cheese
- Salt, to taste
- Fresh Italian parsley, finely chopped (optional)
- Red pepper flakes (optional)
Instructions
- Cook sausage: Add the sliced sausage medallions to a large skillet or braiser over medium heat. Sear the sausage on both sides until they crisp up slightly, about 4 minutes total. Remove the sausage and set aside on a paper towel-lined plate, keeping the rendered sausage oil in the pan.
- Cook veggies: In the same skillet with the sausage oil, add the mushrooms, red and yellow bell peppers, and minced garlic. Sauté for about 3 minutes until the mushrooms begin to brown and the vegetables are softened.
- Add ingredients: Add the gluten-free penne pasta, fire-roasted diced tomatoes, chicken broth, and Cajun seasoning into the skillet. Stir gently to combine everything evenly. Cover the skillet with a lid and bring the broth to a boil over medium-high heat.
- Cook pasta: Once boiling, reduce the heat to medium and simmer uncovered for 15 minutes, stirring every few minutes, until the pasta is tender but still al dente and most of the liquid is absorbed.
- Add cream cheese: Stir the cream cheese into the skillet in chunks, mixing until it completely melts and the sauce turns thick and creamy.
- Combine and serve: Return the cooked sausage to the skillet, season with salt to taste, and stir everything together well. Garnish with fresh Italian parsley and red pepper flakes if desired. Serve immediately.
Notes
- This recipe is a perfect one-pot meal ideal for quick weeknight dinners with minimal clean-up.
- Adjust the Cajun seasoning or red pepper flakes to increase or reduce spice according to your taste preference.
- For a creamier texture, add more cream cheese or a splash of heavy cream.
- Make sure to stir occasionally during pasta cooking to prevent sticking to the bottom of the pan.
- Use gluten-free pasta as specified for a gluten-free meal.
