Instructions

  2. Add Chicken and Seasoning: Place the chicken breasts into the pot. Sprinkle with the Cajun seasoning and add the hot sauce, drained fire roasted tomatoes, and chicken broth.
  3. Simmer Soup: Bring the mixture to a simmer, cover with a lid, and reduce the heat to medium-low. Allow the soup to cook for 30 minutes, stirring occasionally, until the chicken is tender and cooked through.
  4. Shred Chicken: Remove the chicken from the pot and shred it using two forks on a cutting board.
  5. Create Creamy Base: While shredding the chicken, add the heavy cream and softened cream cheese to the soup. Whisk continuously until the cream cheese is fully dissolved and the soup is creamy.
