  3. Add Coconut Sugar: Sprinkle in ¼ cup coconut sugar and process once more. The mixture should start to ball up. Test by rolling a small amount into a ball; if too wet, add more cocoa powder; if too dry, add maple syrup or jam and process again.
  4. Prepare Coating: Spread chopped hazelnuts or cocoa powder in a shallow bowl to coat the truffles.
  5. Form Truffles: Scoop 1-2 tablespoons of mixture and roll into a ball by hand. Press a whole hazelnut into the center and roll again to seal.
  6. Coat Truffles: Roll each ball in the coating mixture until fully covered and place on a parchment-lined tray.
