- 15-18 whole hazelnuts for center
Instructions
- Prepare Hazelnuts: Process 1 ½ cups raw hazelnuts in a food processor until they form a fine meal.
- Combine Ingredients: Add orange marmalade, cocoa powder, maple syrup, pure vanilla extract to the hazelnut meal and pulse to combine evenly.
- Add Coconut Sugar: Sprinkle in ¼ cup coconut sugar and process once more. The mixture should start to ball up. Test by rolling a small amount into a ball; if too wet, add more cocoa powder; if too dry, add maple syrup or jam and process again.
- Prepare Coating: Spread chopped hazelnuts or cocoa powder in a shallow bowl to coat the truffles.
- Form Truffles: Scoop 1-2 tablespoons of mixture and roll into a ball by hand. Press a whole hazelnut into the center and roll again to seal.
- Coat Truffles: Roll each ball in the coating mixture until fully covered and place on a parchment-lined tray.
- Chill and Serve: Refrigerate the truffles for 30 minutes to set. Enjoy chilled, or store in a sealed container at room temperature, in the refrigerator, or freezer for later enjoyment.
