Instructions
- Cook the onion and chicken: Heat the olive oil in a large oven-proof skillet over medium heat. Add the chopped onion and cubed chicken. Cook for about 5 minutes until the chicken is no longer pink and starts to brown. Season with salt and pepper. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the rice and liquids: Stir in the uncooked rice, cream of chicken soup, and chicken broth. Use 2 cups of broth initially and add more if necessary to ensure the rice cooks properly.
- Cook the rice: Bring the mixture to a boil, then reduce the heat to medium-low. Cover and cook, stirring occasionally, for about 15 minutes until the rice is fully cooked. Taste and adjust seasoning as needed.
- Finish with broccoli and cheese: Add the broccoli florets and half of the cheddar cheese to the skillet. Continue cooking for 2 more minutes until the broccoli softens slightly. Sprinkle the remaining cheese over the top and place the skillet under the broiler for a few minutes until the cheese melts and begins to brown.
- Garnish and serve: Remove from the broiler, garnish with fresh chopped parsley, and serve warm.
