Description

A refreshing and vibrant blackberry sorbet made with fresh blackberries, a simple sugar syrup, and a hint of lime juice. This dairy-free frozen dessert is sweet, smooth, and packed with natural berry flavor, perfect for a cool treat on warm days.

  • 2/3 cup sugar
  • 2/3 cup water

Instructions

  1. Make the sugar syrup: Place the sugar and water in a small saucepan over medium heat. Stir occasionally until the sugar dissolves completely, making sure not to let it simmer. Remove from heat and let cool to room temperature.
  2. Prepare the blackberry puree: Wash the blackberries thoroughly. Place them in a blender or food processor and blend until smooth. Press the mixture through a fine strainer using the back of a spoon to extract as much pulp as possible, discarding seeds and solids.
  3. Combine ingredients: Add the strained blackberry puree to the cooled sugar syrup and stir in the lime juice. Mix well to combine and chill in the refrigerator for at least one hour, preferably longer or overnight, to ensure the mixture is thoroughly chilled.
  4. Churn the sorbet: Following your ice cream maker’s instructions, pour the chilled mixture into the ice cream maker. Churn for approximately 20 minutes until it reaches a soft-scoop consistency.
  5. Freeze to firm up: Transfer the sorbet to a container and freeze for at least 2 to 3 hours to allow it to firm up. Before serving, let it sit at room temperature for a few minutes to soften slightly for easier scooping.

  • This sorbet is naturally dairy-free and can be enjoyed as a refreshing vegan dessert.
  • Adjust the lime juice to your taste preference; lemon juice can be used as a substitute.
  • You can use frozen blackberries if fresh are unavailable; thaw and drain excess liquid before blending.
  • If you don’t have an ice cream maker, pour the mixture into a shallow container and freeze, stirring every 30 minutes until firm.
